The equipment of the various facilities cover all steps in the production of meat/sausage products, fish products, delicatessen and convenience products. This allows for product and process development which is completely focused on your requirements. From the outset, our technologists keep a close eye on the later scaling of the concepts to production on your machinery – for a smooth transition into serial production.
New to our in-house Technology Centre is the state-of-the-art sensory 4.0 area for objective sensory food tests and goal-oriented training. Using the specially programmed OFC sensory app, sensory evaluation inputs are made digitally and neutrally without external influences. All processed data and results are immediately available for presentation and discussion.
The skilled, in-house OFC sensory panel carries out sensory evaluations on behalf of the customer. The panel can work on a variety of objectives to increase success, for example in the context of new product developments, recipe and / or process changes, comparisons with competitor’s products as well as assessments of sensory effects on shelf-life.
The Oltmer Food Academy offers a sensory training program (on request combined with process training) with which you can upskill your specialist staff to true sensory evaluation experts. Content from science and theory combines with decades of practical expertise of the trainers from industry, craft and consulting. The training topics are taught practically in the Technology Centre of Oltmer Food Consulting GmbH, directly at your company or another desired venue.
In the Oltmer Food Academy fundamentals training courses, the sensory skills of the participants are trained. Further training modules provide customer participants with the know-how to prepare, implement and evaluate sensory tests of food products. Use OFC Pro-Senso for your in-house evaluation and documentation of your sensory food tests. This sensory app was developed by OFC specifically for product development, quality assurance and control as well as sales and marketing. Your sensory panel can input their assessments regarding individual topics/questions quickly and easily. In addition, the results of the sensory evaluations are immediately available, which enables short-term data analysis and further processing of projects. You receive an immediate overview of sensory changes, e.g. due to recipe adjustments, the replacement of raw materials or a different production process.
With the OFC Pro-Senso app, you have the possibility to present the tasting results clearly for meetings as well as discussions and to save and compare all data digitally. By eliminating the need for paper-based test sheets, you save an enormous amount of time during both the tasting preparations and the results analysis, plus you minimise input errors which may otherwise occur in the data transfer.
